Coarse crushers are specially engineered to grind dry, hard and fragile materials. However, they are completely incompatible with caramel due to the physical properties of caramel itself.
Caramel's glass transition temperature is only 30–50°C. Once frictional heat from a coarse crusher pushes it past that threshold, caramel shifts from brittle to rubbery, deforming instead of shattering. Combined with its low softening point (60–80°C) and high hygroscopicity, caramel quickly melts, sticks to metal surfaces, and clogs screens.
